Namely, I'm in need of NON-SUCKY CROCK-POT RECIPES that:
- can cook for like 7-8 hours on low,
- involve chicken (or anything but that's what I have on hand)
- don't require hard-to-find or wasteful* ingredients
- don't take 10 hours of prep.
...do these exist? Bueller?
Real post later. Doing homework.
*By which I mean, I don't want to go buy an entire thing of bacon for like four strips' worth in a recipe.

Date: 2008-04-04 12:32 am (UTC)I know chicken and dumplings is really good (but a lot more prep time), and so is Continental Chicken (but there's bacon involved). Between all the extra hours I've been putting in at work lately - hence the radio silence and the spazzing - I've been getting home and scowling at the notion of spending an hour or more cooking or figuring out what to cook.

3 lbs of hamburger or ground turkey
12 oz of broth
3 tsp chili powder
5 cloves garlic
1 12-oz can of tomato paste
2 12-oz cans of red kidney beans, drained and rinsed
2 28-oz cans of crushed tomatoes
2 12-oz cans of pinto beans, drained and rinsed
5 dashes hot sauce
1 tsp salt
1 tsp black pepper (I actually use white pepper instead)
1 tsp cayenne pepper (I didn't have this, so I've added more chili peppers)
1 green pepper, seeded and diced
1 red pepper, diced
1 long red pepper, diced
2 Serrano chilis, minced
1 tsp oregano
1 tsp cumin
Crumble and brown meat in olive oil in a skillet set to medium high. Drain fat.
Add all ingredients to the crockpot and cook on low for 6-8 hours.
