I need some help.

Namely, I'm in need of NON-SUCKY CROCK-POT RECIPES that:

- can cook for like 7-8 hours on low,

- involve chicken (or anything but that's what I have on hand)

- don't require hard-to-find or wasteful* ingredients

- don't take 10 hours of prep.

...do these exist? Bueller?

Real post later. Doing homework.

*By which I mean, I don't want to go buy an entire thing of bacon for like four strips' worth in a recipe.

I do a killer beef stew and awesome turkey chili, both of which are pretty non-wasteful. I haven't tried making anything with chicken yet, because I prefer roasted chicken.

I'm told that chicken soup is really really good in the crockpot, though :)

Let me know if you want either the stew or chili recipe.

I know chicken and dumplings is really good (but a lot more prep time), and so is Continental Chicken (but there's bacon involved). Between all the extra hours I've been putting in at work lately - hence the radio silence and the spazzing - I've been getting home and scowling at the notion of spending an hour or more cooking or figuring out what to cook.

This makes a *lot* of chili. A LOT. When I make it, I usually halve the recipe. However, it freezes really well, so it's up to you :)

Chili

3 lbs of hamburger or ground turkey
12 oz of broth
3 tsp chili powder
5 cloves garlic
1 12-oz can of tomato paste
2 12-oz cans of red kidney beans, drained and rinsed
2 28-oz cans of crushed tomatoes
2 12-oz cans of pinto beans, drained and rinsed
5 dashes hot sauce
1 tsp salt
1 tsp black pepper (I actually use white pepper instead)
1 tsp cayenne pepper (I didn't have this, so I've added more chili peppers)
1 green pepper, seeded and diced
1 red pepper, diced
1 long red pepper, diced
2 Serrano chilis, minced
1 tsp oregano
1 tsp cumin

Crumble and brown meat in olive oil in a skillet set to medium high. Drain fat.

Add all ingredients to the crockpot and cook on low for 6-8 hours.

One of my favorites:
Sprinkle chicken breasts with a Good Seasons Italian salad dressing packet (which you can buy individually). Add one can of chicken broth and then add water so the meat is covered. Cook on low. I routinely let this go 10 hours, but I found out the hard way that if it goes 12, you end up with leather chicken. :( 7 or 8, however, shouldn't be a problem. :)
(Easy enough for you?)

I have a real good french dip recipe that takes about 10-15 minutes and can go that long too, if you're interested.

Curious now - boneless skinless chicken breasts by any chance? And one pound, two, three?

Currently don't have a slow cooker since I'm needing to replace the one I did have, but I'm always looking out for new recipes.

I usually do one or two breasts, but I believe the recipe calls for six. So the answer is "about as much as you want". (Did you want the French dip recipe? Me confuzzled.... :)

A couple of my coworkers have some kickass chili recipes (of the "it doesn't matter what kind of meat you start with, 'cuz it's gonna rock regardless" variety) as well as some seafood chowders that make me glad I live where da crabbies still be cheap. I shall endeavor to pry said secrets from their owners.

I know nothing about crock-pots myself, but [livejournal.com profile] bluesoulfire mentioned she was really getting into them, so you might want to hit her up for reference materials. I suspect Kraft Food & Family magazine/website can also be of great use - they're usually pretty good everyman concoctions, once you learn to ignore the brand-specific plugs. :)

Not on your friends' list, but you are on my husband's.

First: put as many frozen chicken breasts (frozen is key) as will fit in your crock pot. Pour over them an appropriate amount of your favorite Italian salad dressing. Cook on low 7 to 10 hours.

Second: take the innards out of a whole chicken, if it has any. Prick holes in a lemon and stuff into the chicken (you can cut it into pieces instead, to make it fit). Rub a cut garlic clove over the chicken skin. Cook on low 7 to 10 hours.

These are both easy and delicious, I've used them many times.

Oooh, the whole chicken one sounds good. You don't have to add any liquid other than the lemon? Does the chicken skin end up crispy, by any chance?

I've been trying to figure out what to do with chicken in a crockpot :)

Nope, sorry--there's enough water that it steams more than roasts. You have to have dry heat for crispy skin; with the lid on it steams, with the lid off it's not really a crock pot (all the heat just escapes).

You can put a whole chicken in the crock pot (I butter my crock first if I think about it, but you don't have to) Put the chicken in, dab about a tablespoon or so of soy sauce over the top (never use salt in a crock pot, it doesn't actually season during the long cooking), add seasonings of choice - garlic, dried onion, pepper and cook on low. You end up with chicken plus lots of broth so you can make soup too.

You can do the same thing with a pork roast. When I do pork I add a can of chopped green chiles, or some salsa verde, or both depending on what's on hand.

Or there's the old classic of chicken pieces, cream of soup of your choice with or without a handful of dried onions and shredded chedder cheese. Not gourmet, but good over rice or noodles.
